Pulihora is a tribute to where my husband hails from which is Andhra Pradesh. It is a goldish dark luscious sauce primarily featuring turmeric, sesame oil, sesame seeds, tamarind, dried red chilies, fresh curry leaves, lentils, jaggery and peanuts. It is cooked with special spice blend that I learn from my father, the spice level varies from in every South Indian State. The sauce is cooked for hours to ensure the tamarind's sourness is well balanced and the peanuts get well soaked in that juice. What makes it stand out is the flavorful tanginess that tamarind gives which is both refreshing and addictive. It is made with simple ingredients yet has big flavors proving simple ingredients can create magic.
It has many names Pulisory, Pulinchoru, Puliyogare, Puliyodarai, Ambad Baath, Kokum rice or simply Tamarind rice.
It is cooked on special occasions and festive days. It is mixed with freshly cooked white rice and served with deep fried poppadum. In South many temples offer this rice to the gods and then distributed to the devotees as Prasadam (blessings).
It is so sumptuous that you can enjoy with cheese and crackers, with any kind of bread or simply as a side dish with any cuisine.
